With continued expansion plans and priority on off-premises performance, El Pollo Loco needed to re-imagine their restaurant experience. Recognizing the need for flexibility and a desire to scale, they partnered with Chute Gerdeman to make their restaurant vision an inviting reality.

With changing consumer behaviors spurred by digital-first demands, it was important to build a modular restaurant design that catered to multiple customer paths. Key features to the new El Pollo Loco prototype include double drive-thrus, pick-up cubbies, GPS-enabled curbside parking, and expanded outdoor seating. While a tech-enhanced experienced was essential, the brand’s rich L.A. heritage was equally important to remain relevant to its loyal and fanatical customer base. Well known in the Los Angeles area for over 40 years, custom murals pay homage, while clever culinary-inspired design features highlight the artisanal craft of the El Pollo Loco grill masters.

El Pollo Loco is scaling the restaurant design via more than 300 remodels and new prototypes on the west coast, and plan to launch the digital-first model in untapped markets across the US.
